Did Bhaamut have specialist priest in Forgotten Realms during 2nd edition? If so, what were they and what book were they in?

Of course, that's just my opinion.

In the FR Draconomicon Bahamut is stated up as Unique Dragon not a god. Bahamut doesnt appear in any of the 2ed FR gods books (unlike Tiamat)

There's no specialty priest write up for him. I checked Cult of the Dragon and Monster Mythology unless it's in some other book.

For some of us, books are as important as almost anything else on earth. What a miracle it is that out of these small, flat, rigid squares of paper unfolds world after world, worlds that sing to you, comfort and quiet and excite you... Books are full of the things that you don't get in real life - wonderful, lyrical language, for instance, right off the bat. - Anne Lamott, Bird by Bird

No, there isn't. I also checked through On Hallowed Ground, and it doesn't mention anything, nor does Planes of Law.

You could alway use the The Platinium knight or Dracolyte PrCs from the 3ed Draconomicon to represent Bahamuts specialist priests

There's also the Vassal of Bahamut in Book of Exalted Deeds. It's fairly paladin/knight oriented, as is the Platinum Knight, but what do you expect from the Dracopaladin. He's so shiny.

If you do a search on the WotC FR Boards for Bahamut, you'll find a 2E write-up of Bahamut for the Realms, including a specialty priest for humanoids and dragons. That said, everyone's advice for 3E is what I'd recommend.
