A Monk/enlightened Fist does add their Wisdom bonus to AC and continues to add their levels together for such features. If you're playing a 9th level Human Duskblade (someone who can get all the prerequisites for enlightened fist sans Monk) then you wouldn't add your Wisdom mod to AC
Quickly some tips. Keep an eye on the spell Greater Magic Wallop (Races of the Dragon). It can make the monks damage output ridiculously high (for a non optimized game). Also the feat Carmendine Monk in Champions of Valor is highly beneficial for an Enlightened Fist build allowing the monk/wizards their Intelligence bonus to AC, instead of Wisdom.
