Thought I'd switch it up a little bit and focus on certain types of enemies instead of actual monsters. Also wanted to focus on a party that could be of any alignment.
So here's what I was thinking. 1) Barbarian with levels in the Forsaker prestige class (Masters of the Wild).
2) Ranger with the Arcane Hunter and/or Spell Reflection alternative class features from Complete Mage, and possibly with levels in the Occult Slayer prestige class from Complete Warrior.
3) Cleric with the Protection domain (and/or possibly my homebrew Anti-Magic or Justice* domains) who focuses on spells that negate (arcane) magic. Might also want to consider the Improved Counterspell feat (which the domain with the * on it has for a Domain Power).
4) Druid who also focuses on spells like Insect Plague or the like on top of any other spells that help negate arcane magic.
5) Rogue who utilizes feats or (especially with levels in the Assassin or Blackguard PrC) poison to limit an arcanist's effectiveness at spellcasting. Ideal Special Abilities might include Improved Evasion and Slippery Mind.
6) Abjurer who focuses on spells from that school that help mitigate the effectiveness of enemy spells. Likely (also) has Improved Counterspell. Might want levels in Red Wizard of Thay from the DMG (if non-good aligned in an evil-aligned party) and/or Master Specialist (Complete Mage).
Oooo! I gotta look up the Forsaker PrC… as this work-up is really tickling my “intrigued-bone.”
I got that a while back as well as Sword and Fist. I'm thinking I'll eventually grab the other 3 of those books as well in case there's something not covered in the 3.5 manuals that might be useful.

Not necessarily a character option but see if the party can purchase witchweed in Luthcheq from the Karanok family.
Witchweed... Don't believe I have either of the sourcebooks that's from. Only 2nd Edition Realms manuals I have are the following: - all 3 deity books - Dwarves Deep - Cormanythyr: Empire of Elves - Elves of Evermeet - Heroes Lorebook As far as the core 2nd Edition, I have - Player's Handbook - Draconomicon -Monster Mythology
How Witchweed would translate to 3.5 Edition is news to me.
