I thought they suggested speed, power, and light/hope, all of which fit with both Lathander as a God, and Abelar and Regg as his servants(none of this to say that the horses play some pivotal role in the book, but Regg and Abelar are on screen quite a bit, and thus, so too are Swiftdawn and Firstlight).
