So, I was going to convert some NPCs from 2nd edition to 3rd edition - but then realised something, I know basically nothing of how psionics worked prior to Expanded Psionics Handbook. The question I need answering should be fairly simple though - did all the classes (except for the Soulknife, of course) in XPH exist in 2nd edition? or do I need to look a bit closer at the characters before interpreting "Psi" as "Psion.?

Only the psionicist class(most similar to the psion of today) existed back then. You'll have to deal with something akin to the sorcerer/wizard split for psion/wilders alone, let alone adding in psychic warriors(which might have existed in limited quantities as fighter/psionicist multiclasses) or soulknives.
Fighter 19/Psionicist 10 into either Fighter 14/Psion 8 (not gotten round to deciding the discipline) or Fighter 14/Psychic Warrior 8.
Priest 12/Psionicist 12 into Cleric 8/Psion 8.
And finally Fighter 9/Psionicist 9 into Fighter 6/Psion 6.
