What defines a stonework trap? I ask because of this quote from the SRD:

"A dwarf can use the Search skill to find stonework traps as a rogue can."

If a trap has a stone pressure plate does that make it a stone trap? If the trap is hidden in a stone wall is it a stonework trap?

Or does the attacking portion of the trap need to be structurally part of the stone? Drop out floors, crumbling ceilings or walls would be examples of that.

It seems it may be a bit powerful if one takes it as if the trap has any stone components to it since most dungeons tend to be made of stone. I guess they still can not disarm them which still allows a rogue to do his thing.

How do other people run this?

The party come to a town befallen by hysteria

Rogue: So what's in the general store?
DM: What are you looking for?
Rogue: Whatevers in the store.
DM: Like what?
Rogue: Everything.
DM: There is a lot of stuff.
Rogue: Is there a cart outside?
DM: (rolls) Yes.
Rogue: We'll take it all, we may need it for the greater good.

I'm not an experienced player but I would say that a stonework trap is a trap which release system is made with stone, a trap working thanks to stone, a stonework trap.
According to me, that's all.

Yes, anything that uses stonework architecture/engineering; counterweights; etc. To simplify, you can rule that the part of the trap that deals damage must be made of stone [hence collapsing ceilings, opposing walls that get closer and closer to squish whoever is in the room (i.e. a-la-StarWars garbage chute), stone spikes, "kissing maidens" (or something like that, i.e. pillars of stone that shoot from the ground rapidly and pin/squish the trespasser to the ceiling), large rolling balls of stone, a-la-IndianaJones, gas vents (i.e. the ducting is bored through the stone, and without the "engineered" release system, there is no trap), large rotating rooms, large elevator rooms, etc. etc. etc.]
