Okay, I'm going to have my pcs attacked while they are camping in the high moors. This is for a 3.5 game.

There are 6 pcs of the following levels: 4, 4, 3, 3, 2, & ELc 3 (a first level character with a +2 ecl).

Now for different reasons, I do not want them to be attacked by more than 2 monsters; one would be better though. Also, I do not want them to be attacked by Human or any humanoids. Also, I do not want to use Trolls. All that being said, I want a hard but not unwinable encounter & have been pooring through my books to find something that would work. I have MM 1-5, FF, MOFR & a lot of other books WOTC & OGL with monsters, so feel free to through out anything you'd like, I'll let you know what I think of it. Thanks for any help.

it ended up being a cinematic fight. The manicore had already fired off all it's 24 spikes, so those weren't an issue. I used the 2nd eddition pic of the manticore. I think the distorted headed dwarf skull of that thing looks a lot better than the 3.5 pic.

The monster that I used for this was a Manticore. He worked out really well. Landed 150 feet from the party & begun firing off spikes at them for 3 rounds. He incapped 1 on the pcs & nearly 2 more. It was a hard fight & the pcs enjoyed it. The barbarian jumped on the beasts back and wrestled it, eventually breaking it's neck while it ripped all the flesh off one of his arms. Very gory combat.

How apposed are you to a custom monster (say on Ogre) or an evil adventuring party that would appose you? You could even have like a CR 4 human-wizard and his CR 5 barbarian/fighter guardian to deal with? Are you dead set on it being a monster?

You're probably right, but a single monster of lower CR is going to be smashed by that party since they have so many actions. It's probably best to go with two CR 4 or 5 monsters or maybe even three or four CR 3 monsters. Other possibilities in that range include gray oozes, algoids from the ToH, and vine horrors from the Fiend Folio.

If you want a single critter, probably aim for something CR 6 or 7. MM2 seems to have a decent supply, like the catoblepas, darktentacles, mudmaw, and swamplight lynx. Or a giant slug from the Tome of Horrors. Or just a shambling mound from the regular MM. With 6 party members, though, you might want to go for 2 CR 4 or 5 critters. Maybe meazels from Monsters of Faerun, tentamorts or stymphalian birds from Tome of Horrors.
